Take a Lap: The Vegetarian Edition

So I’m over half way done with National Vegetarian Week and things seem to be going well.  I’ve been running around the internet looking for recipes and encouragement. Here are a few places I think you should run to this week.

In an interview, Francheska of Hey Fran Hey discusses how she healed herself changing her diet and converting to vegan/vegetarianism. What struck me about this article was that it took her a year to fully convert.  Slow and steady apparently wins the race because she looks great and boasts that she hasn’t suffered from an ailment or cold since she changed her diet four years ago.

My favorite time of the year kicks off this year. BBQ SEASON! I’ve been feeling a little left out with me trying to give up red meat, but these vegan bean burgers may change all that.

The picture alone makes me want to try them this weekend!

The noms continue over at Jason’s Bites’ Healthy Caulispinach Mac and Cheese and with Sporty Afro’s Tomato, Broccoli and Mozzarella Casserole.

Finally, Ebony interviews vegan chef and author Terry Bryant about his cookbook “The Inspired Vegan”  He hit the nail on the head with his closing remarks:

…I don’t care how sustainable, or how healthy, or how ethical food is. If it isn’t tasty. If it isn’t delicious and sumptuous and satisfying, I don’t want it! I don’t want food that is supposedly healthy and supposedly ethical and sustainable if it doesn’t taste good..

This greedy girl says, “Amen, brother!”
